- Kirby Ice House plans to open in the former Bodega space and transforms nightly to the Bumble Lounge.

- Tatanka Western Bistro plans to open in the former Ute City Restaurant space on Aspen’s restaurant row.

- Union Kitchen Meat & Fish opens in Willits.
- 450 Teppanyaki & Sushi opens in Carbondale.
- The Whole Empanada opens in Basalt.

- The Crepe Shack opened in Snowmass Base Village.
- Betula serves French & Pan American cuisine in the former bb’s space.
- The Limelight Lounge debuted in Snowmass at the new Limelight Hotel.
- The Tipsy Trout opened in the Riverside Grill location in Basalt.
- Scarlett’s opened in the former Aspen Kitchen space.
- Sweet Coloradough opens a location in Snowmass Base Village.
- The Village Tavern opens in Snowmass Center
- Grub Thai opened in the former Rocky Mt. Chocolate space in Snowmass.
Opened Fall 2018
- CC’s Cafe opened in Basalt’s old Saxy’s Cafe space.
- Starbucks rises again in Aspen on the mall in the Rocky Mt. Chocolate’s vacated space.
- Casa Tequila’s Mexican Restaurant opened an El Jebel location in the former Downvalley Tavern space.
- Franck Thirion Cafe now run by it’s former chef as French Pastry Cafe & More.
